美食介绍片:


1. 点心 Dim Sum



虾饺 Har gau


传统水晶虾饺是众多广东点心之一。此品用熟淀面(又称澄粉)作皮,鲜虾肉、猪肉泥(七分瘦肉,三分肥肉)、嫩笋肉作馅,包成饺形,蒸制而成。其形似弯梳,故又称弯梳饺。


Traditional crystal prawn dumpling is one of the many Cantonese DimSum. The skin of the dumpling is made using starch and water. The ingredients inside includes prawn meat, pork meat and tender bamboo shoots. Then, it is wrapped together into a dumpling shape, and steamed.




Egg tart / Portuguese-style egg tarts


蛋挞也称为葡挞/葡式蛋挞/葡式奶油挞或焦糖玛琪朵蛋挞。 蛋挞是使用面粉,酥油,麦淇淋,牛奶,鸡蛋和焦糖制作而成。1989年,英国人安德鲁·史斗(Andrew Stow)将葡挞带到澳门,改用英式奶黄馅并减少糖的用量后,随即慕名而至的群众大增,并成为澳门的著名小吃之一,最为代表的是Milktar's 蛋挞。


Portuguese-style egg tart ingredients include flour, butter, margarine, milk, egg and sugar. In 1989, an American man Andrea Stow brought in the Portuguese tart into Macau. Along the years, the people in Macau have been cutting down on the amount of sugar used in egg tart, and since it has always been the locals' favorite.




流沙包 Custard bun


流沙包,广东地区的传统名点之一。制作流沙包主要是用咸蛋黄、黄油,面粉制作而成。因其馅料金黄如流沙,因此起名流沙包。


Custard buns is one of the traditional Cantonese Dimsum. "Liu sha" is named after the look of the custard bun as the salted yolk flowing out of the bun. Ingredients include salted egg yolk, butter and flour.




凤爪 Chicken feet


凤爪也称鸡爪,因为在广东文化中常用 “凤” 来代替 “鸡” 一字。凤爪经炸、煲、蒸后,质地饱满而松软,一吮即脱骨。


Chicken feet is one of the popular dishes in Cantonese. It is first fried, boiled and then steamed to make it soft and delicious.




烧卖/干蒸烧卖 Siew Mai


烧卖是广东省广州市的传统点心之一。干蒸烧卖是用半肥瘦猪肉、虾仁、云吞皮和鸡蛋为主。

Siew mai is one of the traditional Dim sum originated from Guangdong, Guangzhou. The main ingredients consist of lean pork, prawn, egg and wanton skin.



糯米鸡 Glutinous Rice Chicken


“糯米鸡”是广东地区的特色点心之一。“糯米鸡”的制法是在糯米里加入鸡肉、叉烧肉、咸蛋黄、冬菇等馅料,然后以荷叶包裹放到蒸具里蒸熟。


Glutinous rice chicken is also one of the favorite cantonese dim sum in Guangdong. It is made with glutinous rice, chicken meat, cha siew meat, salted egg yolk, mushroom and many more ingredients added together. Thereafter, it is wrapped with lotus leaf around it and steamed.




2. 主食 Mains


烧腊/烧味 Roasted meat

烧腊是一种烧烤食品,包括叉烧、烧鸭、烧肉、烧鹅。广东人通常会吃着烧味配着饭,或者米粉、河粉、面等粮食。


Roasted meat/ siu mei a type of roasted/barbecued food in the Cantonese cuisine. Popular dishes include roast pork, roast duck, roast goose and many more. Siu mei often are sold with rice, rice noodles, pho or other types of noodles.



广东粥 Congee


广东粥的特点就是会比稀饭更加浓稠,水分较少,主要食材包括猪肝,猪肉丝,虾仁等,油条块。在广东人眼中,身体若是有任何毛病,都会选择喝粥,随之把所有滋补的食材放进粥里面煲。夏天能去火,冬天能保暖。 Guangdong congee is much thicker as compared to other congee as the water content is much less. Main ingredients: Pork liver, sliced pork, prawn, fish, century egg, you tiao. The Cantonese believe that congee is able cure all types of sickness. They would add different types of herbs into congee and boil it together. Apart of that, congee can reduce inflammation in Summer and keep them warm during Winter.




豉油鸡/酱油鸡 Soy sauce chicken

豆豉鸡是一道传统粤菜。豆豉鸡做法非常简单,主要材料是鸡和酱油,用小火煮至吸干汤汁即可。


Soy sauce chicken is one of the traditional Cantonese food. It only requires chicken and soy sauce to cook, boil it on low heat till the sauce is absorbed by the chicken.




3. 小吃 Snacks


猪肠粉 Chee Cheong Fan

猪肠粉是广东的经典小吃,源自于广东老西关。以竹窝盛稀米浆蒸成薄粉皮,再将粉皮卷起成长条形。


Chee cheong Fan is a type of snack in Guangdong and it is originated from Guangdong, Laoxiguan. Thin rice paste with bamboo nests will be steamed and made into thin noodles, then rolled together into long strips.



鸡蛋仔 Egg Waffle

鸡蛋仔是广东地区的传统小吃。制作鸡蛋仔的主要食材有面粉、鸡蛋、牛奶、糖和食用油。


Egg waffle is one of the famous traditional snacks. Ingredients to make egg waffle includes flour, egg, milk, sugar and oil.



咖喱鱼蛋 Curry Fishball

广东人称鱼丸为鱼蛋,而最为出名的是他们的咖喱鱼蛋。咖喱鱼蛋是浸在咖喱酱汁里,在售卖时才会捞出来。


In Guangdong, curry fishball is the most famous among all the different fishballs. These fishballs are soaked in the curry sauce before it is sold out to the customer, leaving it the strong curry flavor.



煎堆/麻团 Sesame ball

煎堆也称为麻团,始于广东顺德龙江镇。煎堆以糯米粉团炸起,加上芝麻成,有些包有豆沙等馅料。煎堆在广东、香港等是常见的新年食品,有着 “煎堆辘辘,金银满屋” 的美好寓意。


Sesame balls originated from Guangdong, Longjiang, Foshan. It is made of glutinous rice with red bean paste inside and sesame seed wrapped around it. It is often seen in Guangdong and Hong Kong during new year and has the meaning of growing wealth.




4. 甜品 / 糖水 Dessert


西米露 / 香芋西米露 Mango/Taro sago dessert


香芋西米露发源于广东,主要材料是香芋、西米。


Taro sago dessert originated in Guangdong. Main ingredients: taro, sago.



芝麻糊 Black sesame paste

黑芝麻糊是广东著名糖水之一。芝麻能滑肠治疗便秘,并具有滋润皮肤的作用。


Black sesame paste is one of the famous dessert in Guangdong. It is very good for health purposes as it helps to improve skin complexion and constipation.



黑糯米 Black glutinous rice


黑糯米含蛋白质、钙等丰富营养。制作黑糯米材料包括黑糯米、水、糖和牛奶来品尝着美味的黑糯米。


Black glutinous rice is full of protein, calcium and other nutrients. All you need is black glutinous rice, water, sugar, milk to savor the delicious dessert.
